Zucchini pie with smoked tofu

Autumn has begun and we must take advantage of its yield.  How about baking this simple savory zucchini pie? Thanks to its grated zucchini this pie comes out moist, smoked tofu cheese gives it a special “flair” and canned red peppers are just the right spice for this vegetable pie.

What we’ve brought to you today, zucchini pie, is a super light and healthy dinner, which fills you up without any regrets.

What you need: Directions:
  • 1 big zucchini (seeds removed)
  • 1 finely chopped onion
  • 2 packages smoked tofu
  • 4 eggs
  • 1/2 cup oil
  • 1 cup flour
  • 1 tsp ground black pepper
  • 1 tsp oregano
  • 2 tsps salt
  • 1 package baking powder
  • 1 jar red peppers finely chopped
  1. Grate the zucchini, sprinkle with salt and let rest for a while until it releases liquid. Drain away excess liquid.
  2. Separate the eggs and beat the whites till stiff peaks form.
  3. Finely grate one package of tofu and mix with zucchini.  Add egg yolks, oil, black pepper, finely chopped red peppers and mix well.
  4. Mix the flour with baking powder and sift into zucchini mixture.
  5. Finally, gently fold the stiffened egg whites into the mixture with a rubber spatula.
  6. Line a larger pie pan with baking paper and pour in the batter.  You can also use a rectangular pan, but the pie will be shorter.
  7. Before baking the pie, sprinkle with the second grated package of smoked tofu.
  8. Bake at 180 degrees for about 40 minutes and then increase oven temperature to 200 and finish off, just until the pie begins to separate from the sides of the pan and turn red.
  9. Allow to cool in the pan.

Zucchini is a great product of the summer-autumn garden.  It is a type of squash, which is considered a vegetable in the culinary sphere although botanically it is said to be a fruit.  It originally comes from America, but today it is the result of breeding in Italy.  It has become a most favorite ingredient in both savory and sweet meals and can be made in a variety of ways.
