Vegetable risotto with basil tofu

Try to find someone in your neighborhood who doesn’t like vegetable risotto! Impossible, isn’t it? Although to you this name might seem almost too simple, the recipe itself has a certain uniqueness: seasonality and quality.

Vegetable risotto with basil tofu

This recipe contains wild garlic, which isn’t always available, and thanks to brown rice and tofu this vegetable risotto is beneficial for your health. So don’t hesitate and treat yourself and your family to something that‘s the most important for us all: health! If it isn’t the season during which you can buy fresh wild garlic, you can substitute dried or a pesto made from wild garlic.

What we need: Directions:
  • onions
  • 400g green beans
  • 100g wild garlic
  • 2x 180g basil tofu
  • 350g natural rice
  • 6dcl vegetable broth
  • Olive oil
  • Salt
  1. Finely chop onion and sauté in an oiled pan, and then add rice and broth. Simmer 20 minutes.
  2. Then add green beans and simmer another 20 minutes while continuously stirring.
  3. Meanwhile, dice tofu and fry in a pan.
  4. Add tofu, fresh wild garlic to the softened rice and serve.

Whole grain rice gives this risotto a slightly different taste, but we believe that you will find this vegetable risotto with tofu to be delicious.
