Tofu cheesecake with fruit

Allow us to present to you a wonderful cake – cheesecake with fruit and tofu. You can use any kind of petite fruits or berries you want – raspberries, blueberries, strawberries, blackberries… We’ve exchanged the cream cheese with pureed white tofu.

Tofu cheesecake with fruit

Cheesecake with fruit and tofu is an exquisite delicacy for those with a sweet tooth. You will not regret trying this recipe:

Ingredients Directions
  • 150 g butter cookies
  • 100 g butter and 4 tbsp. brown sugar
  • Cream:
  • 2 packages natural TOFU
  • Juice from 1 lemon
  • 2 packages vanilla sugar
  • 3 tbsp. honey
  • 1.5 tbsp. starch flour and a pinch of salt
  • Fruit sauce:
  • 150 g raspberries and 150 g blueberries
  • 2 tbsp. brown sugar


  1. Finely grind the cookies. Melt the butter and as it cools mix it with the sugar and cookies. Push the mixture to the bottom of a spring-form pan and place in the refrigerator to firm.
  2. In a food processor or blender, mix TOFU, lemon juice, honey, starch flour and salt. Pour the batter onto the butter cookie crust.
  3. Bake about 40 minutes in an oven preheated to 180°C.
  4. For the fruit sauce: mix the blueberries and raspberries in a small pot, mash them, add sugar, and simmer until thickened. Finally, puree with an immersion blender.
  5. Slice the cooled cake, decorate with remaining fruit and pour over sauce.
