Stuffed peppers with marinated tofu

Stuffed peppers with tomato paste and dumplings is one of our favorite meals – loved by both children and adults.  Today we have brought you a very simple recipe for stuffed peppers, which we’ve filled with marinated TOFU, couscous, cherry tomatoes, feta cheese, and other tasty ingredients that are readily on hand.

Baked stuffed peppers

Our recipe for stuffed peppers contains a combination of those ingredients that are perfectly in harmony with each other. Not only you, but also your children will most certainly enjoy this recipe.  Thanks to the tofu, this meal is also a valuable source of healthy plant protein for you and your family.

What you need: Directions:
  •  4 bell peppers (yellow, green, red or orange)
  • 1 cup couscous
  • 1 can beans, drained
  • 5-6 chopped cherry tomatoes
  • 1 cup mashed marinated tofu
  • 1 cup crumbled feta cheese
  • 1 bunch chopped green onions (white and green parts separated)
  • 1 garlic clove chopped
  • 1 tsp oregano
  • Salt
  • Ground black pepper
  • Fresh lemon juice
  1. Preheat the oven to 185° C.
  2. Wash the peppers, cut off the top and the bottom, remove seeds, and stuff with prepared mixture (cut the lower part of the pepper just enough so that it stands up nicely.  The pepper shouldn’t have a hole on the bottom.)
  3. Prepare the stuffing.  Mix beans, feta cheese, tofu, couscous, cherry tomatoes, white part of the green onions, garlic and oregano together in a bowl.  Season with salt and ground black pepper.
  4. Lightly toss the mixture and use it to fill the peppers.  Close the peppers with “a lid from the stems”, place them a baking dish (add about 1 dcl water).  Bake covered until soft.  If you’d like, you can finish them off on the grill.
  5. Drizzle the cooked stuffed peppers with fresh lemon juice (you can sprinkle with the chopped green parts of the green onion) and serve with a green salad.
