Stuffed mushrooms with marinated tofu

We’ve exchanged different types of cheese for our favorite delicate marinated tofu and the classic stuffed mushrooms suddenly gained a different, interesting taste. And of course this recipe is great for people who have problems digesting milk products.

Stuffed mushrooms

What we need: Directions:
  • 600g mushrooms
  • ½ eggplant
  • ½ colorful bell pepper
  • 1 small red onion
  • 1x 180g marinated tofu
  • Oil

Carrot puree:

  • 400g carrots
  • 100g butter
  1. Clean the mushrooms and separate the cap from the stem.
  2. Crumble tofu with your hands, then mix with finely chopped onion, chopped pepper, and eggplant.
  3. Brush mushroom caps with oil and fill with prepared mixture. Bake about 20 minutes.
  4. As a side serve carrot puree, cooked carrots, blended with butter.
