Spinach soup with TOFU

Spinach soup is a Slovak classic and has not only a beautiful color but also a delicate, slightly spicy flavor.

Spinach soup with TOFU

Ingredients Directions
  • 1 package of basil TOFU
  • 600 ml milk
  • 400 ml vegetable broth
  • 450 g fresh spinach leaves
  • 50 g butter
  • 1 medium sized potato
  • 1 onion
  • 2 cloves garlic
  • Ground black pepper
  • Salt

 

  1. Sautee finely chopped garlic and onion in butter.
  2. Add small, diced potato and cook for 1 minute, then add broth. Simmer on low heat for about 10 minutes. Pour in milk and bring to a boil.
  3. Add washed and dried spinach leaves to the soup and cook for another 12 minutes.
  4. Let the soup sit and allow it to cool slightly, then blend it. Add salt and pepper to taste.
  5. Add chopped TOFU before serving.
