Spaghetti bolognese with smoked tofu

Spaghetti bolognese is an approved old Italian classic, with which you simply can’t go wrong, because both children and adults love it.  We’ve complimented the age-old recipe further with smoked tofu.

Spaghetti bolognese with smoked tofu

Spagheti bolognese with smoked tofu is a lighter variation on the recipe with meat.  Especially if you aren’t fully confident in the quality of the minced meat that you buy, rather use better quality tofu.

What you need: Directions:
  • 320 g spaghetti
  • 2 packages smoked tofu
  • 400 g tomatoes
  • 150 g onions
  • 150 g carrots
  • 150 g celery
  • 10 g garlic
  • 0.4 dcl oil
  • 2 dcl vegetable stock
  • 2 bay leaves
  • A pinch of ground nutmeg
  • A pinch of allspice and black pepper
  • 1/4 tsp. dried basil
  • 1/2 tsp. oregano
  • 1/4 tsp. dried thyme
  • Salt
  • Sugar
  • Olive oil
  • Ketchup
  • Sauté the chopped onions in oil, add thickly-grated root vegetables, and lightly salt.
  • Add bay leaves and allspice, pour in vegetable broth and simmer until tender.
  • Add mashed / grated smoked TOFU and let the sauce come to a boil.
  • Add the peeled and chopped tomatoes and simmer together for 10 minutes.
  • Finally, add dried basil, oregano, thyme, nutmeg, pepper, crushed garlic and bring to a boil.
  • Finally add dried basil, oregano, thyme, nutmeg, black pepper, pressed garlic and bring to a boil.
  • Season with sugar or lemon, olive oil and ketchup as needed.
