Savory pie with mushrooms and tofu

Indian summer invites us for a walk in the woods.  Once there we can gather an important ingredient for our savory pie with tofu — mushrooms.  And if you aren’t a mushroom hunter, do not despair, mushrooms from the store also work wonderfully.

This simple savory pie is prepared without using any milk products.  Just a bit of flour and vegetable fat for a flakey pastry crust and then fresh or dried mushrooms, onions, flavored tofu, and eggs.  Then in a few minutes you have this fragrant autumn savory pie on your table.

What you need: Directions:
For the pastry dough:

  • 1 1/2 cups spelt wheat flour (we used a cup with a volume of 250 ml)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 150 g vegetable fat

For the filling:

  • 250-300 g mushrooms (we used fresh button mushrooms, but this recipe also works well with dried mushrooms)
  • 2 eggs beaten
  • 2 packages  flavored tofu (this pie is wonderful with smoked tofu in combination with basil or chili tofu)
  • 1 large onion
  • 2 cloves of garlic
  • Salt and black pepper to taste
  • Oregano
  • A little oil for sautéing onions and garlic
  1. First prepare the pastry dough.  Mix sifted flour, baking powder, salt and cold vegetable fat cut into cubes (straight from the fridge, so that the dough remains flakey, the fat must stay cold as long as possible)
  2. Form a solid, but crumbly dough.  Wrap in plastic wrap and let rest in the fridge, while preparing the filling.
  3. Saute finely chopped onions and garlic in oil, add thinly sliced fresh mushrooms, or dried mushrooms (which have been soaked in water and then squeezed out) and fry with the onions.
  4. Take the dough from the refrigerator and coarsely grate directly into the round pie tin.  Using hands or s spoon press the dough pieces into the bottom and sides of the form.
  5. Place sautéed mushrooms onto the dough, sprinkle with coarsely grated tofu and pour over beaten eggs.
  6. Bake at 200 degrees about 30 minutes until the dough begins to nicely brown and the pie begins to set and turn golden brown in color.
