This recipe makes about 40 cookies.

What we need: Directions:
  • 100 g finely ground flour (you can combine with spelt wheat flour)
  • 100 g very cold vegetable fat cut into small cubes
  • 100 g smoked tofu cheese
  • 1 egg yolk
  • ½ tsp. salt
  • ½ tsp. ground cumin

As decoration: poppy seeds, flaxseeds or sesame seeds

Our tip: the dough, in which you put about the same ratio of flour to fat, could be called crumbly. The finished cookies come out very delicate, buttery, and have a similar texture to puff pastry. That’s why we recommend rolling out the dough thickly, because during baking the cookies noticeably flatten.

 

  1. Put all the ingredients, except for the egg yolk, into a large bowl.         With the help of a wooden spoon, quickly work the fat and flour until they form crumbles.
  2. Add the egg yolk and kneed dough. Don’t worry if it is very sticky, that’s the way it should be.
  3. Work with the dough very quickly. It is important that the fats remain cold so that we attain a puff pastry effect and then the finished cookie will be very light and airy.
  4. Add a little flour to make working with the dough easier.
  5. Shape the finished dough into a round, thick pancakes and wrap in plastic wrap.         Let it rest in the refrigerator for about an hour.
  6. Roll out the well-rested dough between two pieces of plastic wrap until it is about a half cm and cut with cookie cutters. If you are going to sprinkle with seeds, brush them ahead with water or beaten egg yolk.
  7. Bake about 20 minutes at 200 degrees. Remove before the cookies begin to brown.
