Roasted eggplant with TOFU

Roasted eggplant with tofu and asparagus is a tasty treat for those who love baking. We recommend roasted potatoes as a side. Those who want to stay more full longer may want to add some quality wholegrain bread to this delicacy.

Roasted eggplant with TOFU

What we need: Directions:
  • 2 packages basil TOFU
  • 2 eggplants
  • 100 g white asparagus
  • 1 shallot
  • 2 tbsp. oil
  • Salt and pepper
  • 1 head of garlic
  • Thyme
  1. Preheat oven to 200 °C.
  2. Cut the eggplants lengthwise in half and take out the center with a spoon. Season the inside of the eggplant well with salt and set aside to drain.
  3. Finely chop the removed center, asparagus, and shallot.
  4. In an oiled frying pan cook the shallot. Add the center from the eggplant and asparagus and simmer until almost soft. Remove the mixture from heat and season with salt and pepper.
  5. Stuff the eggplants with the mixture and put them in a baking dish. Bake for 25 to 30 minutes. Before finishing baking, sprinkle with TOFU cubes.
  6. Before serving, garnish with fresh thyme and serve with a side of roasted potatoes.
