We have prepared a recipe for you using puff pastry filled with vegetables and tofu, baked in a muffin pan.

Puff pastry cups with spinach and marinated tofu

The taste of each of these ingredients combined with puff pastry is truly a yummy combination. You can take these little cups with you to work as a snack, give them to guests as a quick appetizer or for those who prefer salty treats, you can use them instead of the usual sweet dessert.

Puff pastry

What we need: Directions:
  • 1package unrolled puff pastry dough
  • 1 onion
  • 2-3 cloves garlic
  • 2 tbsp. olive oil
  • 300g spinach leaves
  • 2x 180g marinated tofu
  • 4 dried tomatoes
  • 1 egg
  • Salt
  1. On an oiled frying pan, sauté finely chopped onion and garlic, add the spinach, salt and cook until tender. Add crumbled tofu and stir about 2 minutes.
  2. Meanwhile, cut the puff pastry into circles with a diameter that is 2 cm bigger than the muffin pan you are using, and then place them into the pan.
  3. Fill each circle with the prepared mixture, turn in the edges, brush with egg and garnish with a piece of dried tomato. Bake at 180˚C for 20 min.
