Puff pastry cake – quick fruit cake

Sometimes a person has a taste for something sweet, but there isn’t time to prepare such a treat. For such cases here we have a puff pastry cake. It doesn’t take much and in a brief moment using store-bought pastry dough, you can make a refreshing treat stuffed with an unconventional but very tastey tofu and fruit filling.

While you may not like to grab for ready-made products, fresh puff pastry dough isn’t a cause for worry. Think of it this way, that skilled bakers did the hardest part of the job for you and you are just bringing that to a successful outcome.

What you need: Directions:
  • 1 package fresh puff pastry dough, in sheets (in a package)
  • Preserved cherries (feel free to use also different fruits, fresh or canned)
  • ½ tbsp potato starch
  • 1 package natural tofu
  • 2 tbsp soy milk
  • Juice and zest of half a chemically untreated lemon
  • 2 tbsp granulated brown sugar (if you want substitute maple syrup)
  • Pinch of ground cinnamon
  1. Roll out the ready-made puff pastry dough until it is about 5 mm thick and cut it into bigger circles (for example with a glass).
  2. Using a smaller glass, make an impression for the filling on each pastry circle.
  3. Mash the natural tofu with a fork, add 2 tbsp soy milk, sugar or maple syrup, juice and lemon zest and blend until smooth with a hand blender.
  4. If desired, you may flavor the filling according to you preferences with sugar or lemon.
  5. Drain the canned cherries, place in a pot, add about 3 tbsp strained cherry juice. When it begins to boil, add potato starch mixed with a spoon of water and boil for a few minutes.
  6. Place a spoonful of tofu filling into each formed dough circle, add cherry sauce on top and bake.         Don’t forget that the pastry dough will grow, so leave enough space in between the cakes.
  7. Bake at 180 degrees until the dough starts to turn golden, about 15-20 minutes depending on the thickness of the dough and amount of filling.
  8. Allow the puff pastry cakes to cool completely on the sheet tray.

Fruit cake with puff pastry dough tastes the best freshly baked. If you don’t manage to eat them all, they will last 2 more days stored in an airtight container, but count on the crispy puff pastry becoming soaked a bit from the filling.
