One bowl quick lactose-free gingerbread cake

With the stress leading up to Christmas, not everyone has enough energy for time-consuming baking.  We were thinking of those people when we created this super quick and easy recipe for a wonderful gingerbread cake. Simply mix all the ingredients together one by one – in the end you don’t even need a mixer.  Our version doesn’t even contain lactose and it is readily adaptable to your tastes by adding nuts or chocolate.

Christmas is a celebration, so we have also created this simple gingerbread cake to be a bit more festive. Sometimes just a little touch is enough to make your ordinary cake served with coffee become a cake made for the holiday table. For example, instead of using a classic cake pan we poured the cake batter into a pan for tortes and we richly decorated our gingerbread cake with bitter chocolate.

What you need: Directions:
  • 250 g powdered sugar
  • 2 whole eggs
  • 2 tbsp cocoa powder
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • 1 baking powder for gingerbread
  • 2 dl oil
  • 500 ml soy milk
  • 400 g finely-ground flour (can sub spelted wheat)
  • 150 g dark chocolate and 1 tbsp oil for the chocolate glaze
  1. In a larger bowl add sifted flour, cocoa powder, ground cinnamon, baking soda, baking powder for gingerbread, and powdered sugar.
  2. Thoroughly mix all the dry ingredients.
  3. Add oil, beaten eggs, and soy milk. Mix well until the batter is smooth and semi-liquid.
  4. Pour the batter onto a baking sheet lined with baking paper or into a torte mold (which is either lined with baking paper or greased and sprinkled with flour).
  5. Bake at 180 degrees for about 30 minutes (with a cake mold the gingerbread cake will be taller and bake time will be about 40-45 minutes).
  6. After baking allow to cool.
  7. For the chocolate glaze, melt the chocolate in a double boiler/water bath, mix in oil so that the glaze is shiney and pour over the gingerbread cake.
