Mushroom Spread with smoked tofu

Our post for today will give you instructions on how to prepare a vegetarian “pate” using smoked and natural tofu and mushrooms fried with onion and a little garlic.  We continue to enjoy tofu recipes and are never bored with them. They are healthy, provide great variability, and most importantly always have a surprisingly good taste — this spread too.

Mushroom spread with tofu

Sometime try adding smoked tofu along with the classic natural tofu — with this combination you won’t remain unimpressed. The subtle smoky taste will win you over and you’ll begin to experiment with it in other tofu recipes.

What you need: Directions:
For the spread:

  • 1 package natural tofu
  • 1 package smoked tofu
  • 200 g mushrooms
  • 1 larger onion
  • Olive oil for sautéing
  • Salt, ground black pepper
  • Sprig of thyme
  • Cloves of garlic

For garnish:

  • Chopped chives
  1. Put both types of tofu in a larger bowl and mash with a fork or finely shred with a grater.
  2. Heat about 2 tbsp olive oil in a pan and fry finely chopped onions (till translucent) and finely chopped garlic.
  3. Add sliced mushrooms and sauté without adding water until soft, about 10 minutes.
  4. Season the mushroom mixture with salt and pepper and let it cool slightly.
  5. Then mix the mushrooms and the two-type-tofu mixture together and with the help of a hand blender – puree till smooth.  But, if you prefer lumpy spreads, just mash together with a fork.
  6. If necessary, season further with salt, ground black pepper, or thyme.
  7. To garnish, sprinkle with chopped chives.

This wonderful tofu spread goes well with fresh bread/pastries or salted crackers.  It remains fresh for two days in the refrigerator.
