Minestrone soup is a nutritious and thick Italian soup loaded with vegetables.

Minestrone soup with TOFU

Ingredients Directions
  • 1 package chilli TOFU
  • 1,5 l vegetable broth
  • 400 g chopped tomatoes
  • 250 g root vegetables (carrots, parsnips, celery)
  • 1 can white beans
  • 1 zucchini
  • 1 onion
  • 50 g peas
  • 2 tbsp. olive oil
  • Ground black pepper
  • Salt
  • Fresh basil

 

  1. Sautee finely chopped onion.
  2. Add chopped tomatoes and chopped root vegetables. Pour in broth and let cook for 5 minutes.
  3. Wash zucchini, chop with the peel on, and add to the soup with strained beans and peas. Cook for another 5 minutes.
  4. Add salt and pepper to taste.
  5. In the bowl, garnish soup with fresh basil and chopped TOFU.
