Flourless quick apple pie with tofu

Apple cake belongs among all our favorites. Not just because of its fabulous taste, but also because you can get good apples year round. This quick apple pie is exceptional in that it is made completely without flour and milk. We’ve replaced these with a combination of tofu and eggs. Finally the topping crumble is made from oatmeal and not from typical white flour.

Thanks to cinnamon, apple, brown and vanilla sugar, this quick apple pie goes wonderfully with colder days or with a good cup of tea on a rainy evening. The crumble topping containing oatmeal is a pleasing finish to this great pie.

What we need: Directions:
  • 5 eggs
  • 250g brown sugar
  • 150g butter
  • 5 x 180g natural tofu
  • 1 vanilla sugar
  • 1 cinnamon sugar
  • 5 tbsp. coarse flour = on the pan
  • 1 baking powder (12g)
  • 4 apples

For the crumble topping:

  • ¾ cup oatmeal
  • ½ cup brown sugar
  • 100g butter
  • Pinch of salt
  1. In a deeper pot, mix the ingredients for the crumble together using your hands. Make sure the dry ingredients are well mixed into the butter and then set aside.
  2. In a second container, whisk eggs and sugar until light and foamy. Then add softened butter, natural tofu, vanilla sugar and baking powder and mix thoroughly.
  3. Grease a pie pan (tin with raised edges), dust with flour and spread out prepared batter.
  4. On the batter spread out sliced apples evenly, sprinkle with cinnamon and sugar, and top off with the oatmeal crumble.
  5. Bake to golden at 180 for about 50 minutes.
