Dumplings with dried tomatoes and smoked tofu

These dumplings (pierogi) belong to a set of dishes that can be described as traditional. However, if you are a creative soul who likes experimenting and you want to try a new taste, prepare these dumplings with tofu filling.

Smoked tofu is our specialty and is really smoked with beech chips, so that the flavor you taste isn’t from artificial flavors and colors. We like to use smoked tofu in pastas, but this time we are using it as filling in traditional dumplings. The result is this yummy recipe.

What we need: Directions:
Dough:

  • 100 g finely ground flour
  • 60 g hot water
  • 10 g butter
  • Pinch of salt

Filling:

  • 180 g smoked TOFU
  • 100 g mascarpone
  • 4 dried tomatoes in brine/oil

Tomato sauce:

  • 400 g chopped canned tomatoes
  • 1 small onion
  • Olive oil
  • Salt
  1. Dough preparation: sift the flour into a bowl, add salt and butter melted in water.         Kneed dough until elastic and let stand 15 minutes.
  2. Filling and dumpling preparation: in a bowl, crush smoked tofu, mix it with mascarpone and stir in dried tomatoes cut into small cubes.
  3. Roll the rested dough out to about 3 mm thickness and create 5 – 6 cm long squares. Put the prepared filling on half of one square, cover it with the other side of the square, and push down on the edges to seal.
  4. Put the finished dumplings into salted boiling water, boil until they float to the surface and serve with tomato sauce.
  5. Sauce preparation: sauté finely chopped onion in olive oil until golden brown, add chopped tomatoes, salt, and simmer on low stirring frequently for about 10 minutes.
