What we need: Directions:
  • 4 big parsnips (1kg)
  • ½ apple
  • 1.5 l vegetable broth
  • 1 medium-sized onion
  • 1 garlic clove
  • 1 dcl white wine
  • 1 x 180g marinated tofu
  • 2 spoons olive oil
  • White pepper
  1. Finely chop onions and sauté in oil. Pour in broth. Add chopped parsnips, apple, pressed garlic, and pepper and cook until soft. Add the wine and cook off by boiling.
  2. Puree the softened vegetables with a stick blender in the pot.
  3. Cut the tofu into cubes, fry in oil and add to the prepared soup. Garnish with parsley.
