Cream of broccoli soup is one of the most popular types of soups among adults and also children. They love it for its taste and delicate texture.

Cream of broccoli soup with basil tofu

For this recipe we’ve combined the beloved tastes of broccoli and basil tofu. Instead of classic sour cream, if you have a lactose intolerance or bovine proteins, you can substitute natural tofu to make soy cream for classic sour cream.

What we need: Directions:
  • 1 bigger head of broccoli
  • 1 l vegetable broth
  • 200 ml sour cream
  • 180g basil TOFU
  • Tricolor peppercorns
  • Oil
  • Salt
  1. Boil broccoli until tender in prepared vegetable broth. Then in a blender, puree with salt, pepper, and cream. Simmer an additional 2 minutes.
  2. In a frying pan with a little oil, fry the cubed tofu then add the tofu pieces to the soup and its ready to be served.
