Colorful spaghetti with chilli tofu

Why „colored spaghetti“ you ask? Because the combination of purple, red, green, white, and brown isn’t just perfectly coordinated, but thanks to the chilli tofu it’s also healthy.

The combination of spaghetti, vegetables, fresh basil, and other ingredients in this recipe is essentially a healthier substitute for the commonly available option: spaghetti with ketchup and cheese. Although this recipe requires a bit more time, believe us, it’s worth it!

What we need: Directions:
  • 500g spaghetti
  • 1 small onion
  • 1 eggplant
  • 600g small tomatoes
  • 1x 180g chilli tofu
  • 8 leaves fresh basil
  • Olive oil
  • Salt
  1. Sautee finely chopped onion in oil, add diced eggplant and season with salt.         After 5 minutes, add the tomatoes cut into halves. Simmer over gentile heat – stirring continuously.
  2. Then add the tofu cut into smaller pieces and stir.
  3. Cook the pasta al dente, drain, and slowly stir into vegetables with tofu. Before serving, add basil leaves.
