Colorful couscous with tofu

Combining light couscous and vegetables is the ideal choice for a light while nourishing meal, which is also a source of high quality vegetable proteins thanks to the tofu. Appreciate this dish for lunch, dinner, and also as a snack at work.

What we need: Directions:
  • 250g couscous
  • ¼ l water
  • 3 tbsp. olive oil
  • 1 eggplant
  • 1 zucchini
  • 5 mushrooms
  • 1 red onion
  • 1 large red bell pepper
  • 1 carrot
  • 100g tomatoes
  • 2x180g natural tofu
  • Parsley
  • Tsp. salt
  • Tricolor peppercorns
  1. Pour couscous into pot with hot water, add salt, allow it to absorb the water while covered.
  2. Chop vegetables into small pieces. On a baking sheet mix vegetables with oil, season with salt, pepper, and tricolor peppercorns, put in a 200˚C oven for 20-25 minutes to bake.
  3. Meanwhile, chop tofu into cubes, season with salt, and fry in oil.
  4. Remove the vegetables from the oven mix in tofu, couscous, stir in chopped fresh tomatoes and garnish with parsley.
